Pete's Log: Fermentation Day

I started two fermentation projects today:

1. Sauerkraut. Chopped up one CSA cabbage, grated one CSA carrot and one Trader Joe’s apple. Gave it a good pounding to release the juices, then mixed in two tablespoons of salt and one tablespoon of caraway seeds. Put it in a ceramic fermenter I bought a month or two ago for this purpose.

It’s my first ever attempt at this but I’m feeling optimistic. So now we wait.

2. Sourdough Starter. I used the same recipe I’ve used in the past. If it seems to thrive I’ll let JB name it. I’ve heard naming your starter helps keep up the motivation to feed it.

With as hot as it’s been lately I probably won’t bake with it soon. But it’ll be nice to have ready for when I do feel like baking.
