Pete's Log: Cheese

JB has a favorite cheese: Cypress Grove Midnight Moon. She’s a big fan, but we don’t always have it on hand. We’ve tried before to find replacements, but she’s got a discerning palate, so she’s been on to us.
Today though, we’ve had some luck with Trader Joe’s 1000 day Gouda. We’ll see if it holds.
