Pete's Log: When life gives you lemons

I read the other day about freezing lemons. And that you can freeze them pre-sliced. So yesterday Jamie bought a 5 pound bag of lemons at Costco.

Today I cut six of them into a variety of wedges and slices and laid them on a silicone mat on a baking sheet and set that in the freezer. Six lemons about perfectly covered the sheet, and there are still a dozen or so lemons left in the bag.

Once the lemons were frozen, we moved them into freezer bags, removed as much air as was easily possible, and returned them to the freezer. I should have taken a picture of the frozen lemons on the baking sheet. It looked very appealing. I'll probably chop and freeze another batch tomorrow.

Now we just wait for the opportunity to arise for a cold lemon slice. Or wedge. We've got both.
