Pete's Log: Savory Pancakes

Some number of years ago, Jamie and I bought Yotam Ottolenghi's Plenty, a book of "Vibrant Vegetable Recipes." For no particular reason, we've only made one recipe in the book, but we've made it multiple times, albeit somewhat altered by this point.
The recipe in question is for savory pancakes. And it's perfect for the early weeks of the CSA when spinach and green onions are in heavy rotation. I made some tonight and we enjoyed them with yesterday's leftovers.
Here's today's take:
- Wilt more spinach than you think you need, then squeeze out as much water as you can and chop it small
- Chop four green onions
- Half a can of green chile
- Mix until smooth:
- Quarter cup of whole wheat flour
- Quarter cup of regular flour
- One tablespoon of baking powder
- One egg
- Half a cup of milk
- 4ish tablespoons of melted butter
- A healthy dose of salt
- An even healthier dose of cumin
- A bit of pepper
- Combine greens and pancake mix - goal is they should be equal parts by volume
Then pancake them up.
I think it's about time we tried another recipe out of Plenty.
